M.C Escher is considered the father of the optical illusion by most people.
He produced some mind staggering images which have gone on to become iconic images in their own right, including the ones below;

Its interesting to see that even today people are fascinated by these puzzles and there are quite a few still being produced;

Fake Japanese Pool

This pool is by artist Leandro Erlich. The effect is achieved by two sheets of clear acrylic about a foot apart with water between them. The top surface is also filled with around 4 to 5 inches of water so that it just looks like water – this makes the illusion work both ways as can be seen in these photos.
